Obituary of Eileen Vaccaro

Eileen Vaccaro was a caring wife, mother, nana, and friend.  She left this world on May 7, 2021 at age 76 after a short battle with pancreatic cancer. She was born to Charles and Kathleen McCarthy on July 4, 1944 in Manhattan, NY. Eileen was retired from the Florida Institute of Technology in Melbourne, FL where she spent 22 years in the International Student Affairs office.

Eileen met her husband Joe Vaccaro at a dance in NYC. They were married January 22, 1966 and lived in Brooklyn and Long Island for many years before relocating to FL with Grumman.  They had one daughter, Coleen. Eileen is preceded in death by her parents Charles and Kathleen McCarthy, brother Charles McCarthy, and husband Joe Vaccaro.  She has one granddaughter, Sophie.  Coleen and Sophie were both the light of her life.

Friends and family would remember that Eileen loved cats, the color red, Cadillacs, anything to do with her hometown New York City, shopping, fun jewelry, and everything Italian.  At some point she may have referred to you as a pussycat, good man, or good woman, or she said “Meow” instead of saying goodbye.

Eileen is survived by her daughter, Coleen (Jason) Taylor, and granddaughter Sophie Isabella Taylor.  Eileen will also be forever remembered by her nephews and dear friends.

A grave-side service for family and close friends is scheduled for 10 am on May 17, 2021 at St. Joseph’s Catholic Cemetery in Palm Bay, FL. In lieu of flowers, please donate to the Vitas Hospice at Brevard County in Eileen’s name. A Celebration Of Life will be scheduled for a later date.
